I’m making Pasta alla Norma with the eggplant I picked up this week. Will either use this recipe or one from Cookie and Kate - they both call for roasting the eggplant instead of sautéing. https://giadzy.com/blogs/recipes/pasta-alla-norma

I also love baba ghanoush, but haven’t been happy with what I’ve made at home.

I like to slice them in half, rub olive oil on the exposed surface, then put it facedown in the oven and bake it (don’t forget to poke the skin with a fork a few times). Then when it’s soft and cooked I scoop out the flash and chop it up, and then I mix it inti pasta with sautéed onions and garlic, maybe some tomato. Pine nuts if you feel like it, and grated parm. Super easy and a crowd-pleaser around here

The farmers market is full of eggplant, especially smaller, thinner, light purple ones. Any suggestions on how to use them? The only thing I ever make is eggplant Parmesan, which isn’t an easy, weeknight kind of dish.
