Gazpacho

I’m loving my air fryer this summer. It’s fast, easy, and I’m not standing over a hot stove or oven. Tomorrow night is air fryer salmon with spinach salad.

Sliced peaches, good tomatoes, burrata or fresh mozz, some pine nuts, lots of chopped basil, drizzle of olive oil, balsamic vinegar (the good glaze stuff), salt and pepper. Pair with some toasted bread. Done and done.

I eat this every other night in the summer.

Sure, I buy fresh produce in season. I’m using the oven to make a peach pie tomorrow! In the fall it would be apple.

I cook the same foods be it hot or cold out. So I don’t know.

NP. I have ac, but we spend a lot of time outside (SAHM), and it is hot and oppressive anywhere but the pool (and we don’t have a membership anywhere so we can’t go every day).

To answer the question, we do a lot of veggie soups (like tomato, cream of celery, broccoli cheddar, that kind of thing) and grilled cheese or we will just do veggies and hummus and pitas or a bean salad kind of thing with tortilla chips. Occasionally I will do a really hearty breakfast with omelets and waffles and the whole thing and that night for dinner we just have chilled fruit and yogurt (watermelon slices right out of the fridge taste so good after a long day!)
