Hard boiled eggs, angel food cake, custard pie with meringue, frittata, pudding and mousse, pie crusts that you make and freeze, casseroles, frozen custard, muffins, cheese cake, pickled eggs. You can also freeze raw eggs and they’re great to use later for baking or omelettes. Just find a recipe online don’t go freezing a whole egg.
Fresh farm eggs also last at least 2-3 months minimum in refrigerator, so don’t feel you have to use them all at once. Just mark the day you received them and rotate your stock. If it gets past a couple months do the floating egg test and don’t eat any egg if the membrane doesn’t separate from the shell. If the egg feels heavy and off when you pick it up and give it a slight shake get rid of it. If that happens the entire dozen is probably bad and it’s egg test time.
