Yasmin Khan's Zaitoun, which showcases Palestinian cuisine, is excellent. By and large, the recipes are simpler than Jerusalem or Ottolenghi's other cookbooks.

There is a reason why delicious food is not terribly accessible. Simple will rarely get you the results you desire. It’s why when I make hummus I take pains to peel every single skin off my freshly cooked chickpeas and use toum instead of garlic cloves.

Can anyone recommend a Middle Eastern cookbook? Israeli-ish I guess. I’m aware of Yotam Ottolenghi but even his simpler recipes I find to be more involved than I’d prefer. I love all the food at Tatte. So something more along those classic-ish lines I guess. TIA.
