I sauté them if I am making them fresh for breakfast, I usually only roast them if I already have the oven on, but I love them so many ways! Somehow i I never thought of sandwiches. Great idea!

I’ve been doing this for years. I always plant way too many tomatoes and the cherries are particularly prolific. It’s a great way to use up large quantities.

Roast tomatoes, add balsamic vinegar and olive oil (and toasted pine nuts if you are feeling fancy) and put on greens. Easy delicious salad.

My produce delivery on Wednesday had horrible tomatoes - they started to get mushy the next day. So I decided to roast them instead of using them fresh (whole, not cherry). I just had them with hummus on grain bread for lunch - so good!

Yes also great thrown into any pasta/rice/grain dish. Love them on top of fish too.

I love doing this, but cherry tomatoes are eaten so quickly at our house that I rarely have enough on hand to roast.

I use roasted cherry tomatoes as a topping for ricotta cheese on french bread slices as an appetizer.

My DH loves a Full English, so often roasts or sautés tomatoes for breakfast.

When I roast broccoli, I try to use up all vegetables in my frig and often add cherry tomatoes to the mix, along with onions, carrots and mushrooms.

I haven't yet, but I'm going to try next week! Thanks for the idea, OP! (Although it'll be a fight to save enough to roast -- my kid loves to snack on fresh cherry tomatoes.)

Sorry if I'm way late on this. I didn't realize how something so simple could be so delicious! Ever our kids love them. Just toss a few pints of tomatoes in a sheet pan with a olive oil, pepper and salt... bake until roasted. So good as a slightly acidic side with eggs and also fantastic flavor and moistens a lunch sandwich.
