I'd personally swap out the fava beans for quinoa, but that's personal preference. Not sure what the tomato sauce is for?
It's all Greek food, it's a greek way of preparing potatoes that's traditional.
I mean Americans put tomato sauce on our potatoes too. It's just Greek tomato sauce tastes better than ketchup.
