I like my Instant Pot for quick dinners. Most things you can put in a Crockpot can be cooked in an Instant Pot. Or you can pre-cook protein at the weekends and add to dinners. Or make meals at the weekends and freeze.
I love how you gave a snotty answer and then suggested either using an instant pot (which is all hype, takes a long time and produces subpar food) and using precooked meat. It would be easy to not eat much meat in your house.
OP there are good ratings for the air fryer by foodi (I think) that sort of folds up. It is wide, but you can store it vertically. That might work for you. Also, do you have a grill? Once you get used to it, I find it easier than other cooking methods.
