If you have the time, shepherd's pie might be good for today's weather. Otherwise, if I'm a hurry, I just throw fast-cooking veggies (frozen veg or fresh baby spinach) and ground meat together in a pan and add Japanese soy sauce or Worcester sauce, and serve with couscous.

My family really likes cheeseburger pie, but it's a sodium bomb.

My family likes a stovetop casserole we call Slumgullion:
Saute ground beef with garlic
Add frozen sliced okra
Add frozen diced peppers/onions
Add canned diced tomatoes and tomato sauce
cook until tender
Add instant rice to soak up extra juice
Sprinkle grated cheddar/colby cheese on too and allow to melt.
