Farro, roasted butternut squash, onions, pine nuts, and parsley. Throw in a bay leaf when boiling the farro.

Before roasting, season the butternut squash with salt, pepper, and either allspice or Penzy's Galena Street spice...yum.

I love farro, but I try to avoid gluten (it gives me inflammation), so I’ve been using millet or quinoa [well rinsed and rubbed to remove the coating which makes it taste funny]

I also like to do pearl couscous or orzo with fresh mozzarella balls, cherry tomatoes, and zucchini or cucumber.

Trader Joe's sells canned chickpeas in a lemon and olive oil dressing. It's called something like "chickpeas with parsley and cumin" and is in the canned aisle next to canned dolmas. These chickpeas are amazing. Mix them oil, seasoning and all with your grain of choice, sliced red pepper, red onion and arugula. They'd be great with farro, brown rice or quinoa.

I bought a bottle of the green goddess dressing at chopt and it was delicious on everything. I did one that was farro, tomato, black beans, corn some arugula and that dressing. Yum.

Wondering if anyone has a go-to or set of go-to recipes for a great grain salad -- think farro + vegetables. Doesn't need to be vegetarian. Something light, good for a lunch on a hike -- that kind of thing.
