Towels. You could try sheet pans with wax paper.

I like the old school Italian metal ones that clamp to the counter and you hand roll it out. They sell them at most Italian markets and they aren't very expensive.

A roller for long pasta, or an extruder for tubular pasta? Do you have a stand mixer?

Manual or automatic? The Mercato Atlas is what my Italian friends recommended. You can buy attachments for it.
