OP here.

I ended up making a sort of roast beef spaghetti alla carbonara. It was super easy and delicious and a total stomach bomb about 20 minutes later. Even "the picky one" ate it.

Soup, stew, hash, sandwich spread, empanadas, sandwiches cold and open faced with gravy, salads. Bread pudding or stuffing, bread crumbs.

Agree this sounds like beef stroganoff. Or as my DH calls it, because he loves it so much, "beef stroke it off".

Allrecipes.com lets you search by ingredients. You might want to consider a take-off on Swedish meatballs. Even if the roast doesn’t form balls, I think you could get a similar flavor profile and that would use up the cream and you could serve it over the macaroni noodles.

Is there a website where you plug in what you have and it offers recipes based on the ingredients?

I have about 10 oz leftover roast beef, some heavy cream, pasta, some cheeses, bread rolls....and I want to use all that up and clean out my fridge.
