This is what we do - 50/50 mixture of white vinegar and water, once a day after finishing the dinner dishes (and as needed during the day when we are cooking a lot).

Dr Bronners and a washcloth. Not after every meal bc not every meal creates crumbs or raw foods.

Wipe if something is on them during day. Spray with Simply Green or something and full wipe-down after dinner every night.

Not after every meal. Only if they are dirty or something spilled. We eat dinner at our counter (seats 5) so it does tend to get dirty frequently.

409 or whatever multipurpose spray is under the sink.
