I made this one year, and it was pretty good. I made parve whipped cream using coconut milk.

Also, have you ever made kosher for Passover dinner rolls? I could see making those and sprinkling some sugar on top before baking, then serving split with whipped cream and berries. More like shortcake than the sponge cake.
