Also, have you ever made kosher for Passover dinner rolls? I could see making those and sprinkling some sugar on top before baking, then serving split with whipped cream and berries. More like shortcake than the sponge cake.

They have a Passover sponge cake mix in grocery stores.

My SIL is turning 50 over Passover and my BIL asked if we could bring the cake. She'd a like strawberry shortcake and it has to be parve. I could go to a local caterer to get the spongecake and just add strawberries and parve whipped cream, but was thinking of just making it. Does anyone have a tried and true Passover shortcake recipe? Or spongecake recipe that would work for this? TY!
