OP here. Thanks everyone! Interesting to see how divided opinions are. I am leaning towards single in bedrooms and double in living spaces where light control does not matter.

One. Less light to come through if they really are side by side with an 1.5” of mounding in between. If drywall in between, then two.

How are the windows framed? Is the moulding around each window, or around the pair? If it’s around each window I would do one for each window and if around the pair, I would do one shade for the pair.

we have one blind for both in one room. it’s dark when it needs to be. the other room is three blinds for three side by seize windows and it’s much brighter in the AM.

It is a hard choice.
Not to make it more difficult but one other consideration is how much coverage you will have for the area between the two side-by-side windows. Meaning, if you choose two separate shades for the attached windows, will someone on the outside be able to see in if they stand at an angle? That isn't as much of a big deal for 2nd and 3rd floor windows but you may want complete coverage between the two windows on the ground floor. On the other hand, the ground floor windows may be when you want different heights for opening and closing, too, especially if you have the windows open to catch a breeze.
I don't think there is a universal best answer. I think there is the best answer for you. And what you do on one set of windows may vary for the other windows. I know I usually want all of my windows to have the same treatment but there are times when you'll have to make a different choice.

We are in the processing of selecting roller shades for our whole house. Most rooms have one or two pairs of windows, right next to each other. Would you:
a) Get one wide shade for each pair (pro: less mechanisms to fail, con: would have to do outside mount instead of inside)
b) Get a shade for each window (pros: ability to adjust to different heights, inside mount, con: slightly more expensive?
