A lot of this is over-cautious and based on the worst-case scenario. If there's even a 1 in a million chance of someone dying from something, FDA will base recommendations to avoid that one death.
You have set the bar pretty low if your goal for food safety is "don't die." We have grown beyond caveman times, friend
