They would be better if you pounded them flat with a meat tenderizer

I spray each breaded side with some olive oil spray and flip half way through.

Baking is fine but if they are thin slices they will cook quickly. You can put a pat of butter on top which will make it less dry or a drizzle of olive oil.
But it’s also super easy to pan fry them if they are thin sliced.

You should be fine baking them, air frying, toaster oven or pan fry also ok.

Or do I need to fry them in oil? How look should I bake them if that isn’t awful?
