Just don't add as much salt to the meatballs-with the fish sauce, you actually need little to no additional salt.

I’m a nanny and cook for the family/myself (3 boys 11, 14, 17)

I make all the sauces from scratch, since the kids are older and I have time:
Thai green curry
Chicken tikka masala
Laksa soup
Pumpkin curry
Lemongrass pork meatball bowls
Pesto and tomato chicken pasta
Greek chicken kabobs
Skinnytaste teriyaki salmon and vegetables
Mongolian chicken with broccoli
Lebanese chicken kabobs

My top 10 that I would consider for weeknight dinners:

- Chicken fajitas
- chicken drumsticks + potatoes + broccoli
- Pasta and meat sauce and garlic bread (make 2x sauce for easy freezing)
- Breakfast for dinner in all its glorious forms
- Stuffed peppers (gr beef, cauliflower rice, sweet potato, diced tomatoes)
- Asian-theme salad with chicken
- fish tacos
- "egg roll in a bowl" (https://www.foodnetwork.com/recipes/food-network-kitchen/egg-roll-in-a-bowl-8351080)
- BLTs (ok, maybe that's stretching the definition of home made)
- Chicken noodle soup

Kind of a baked ziti approximation with spaghetti squash instead of pasta
Hungarian lentil soup

Carrot ginger soup
Smitten kitchen one pot farro tomato thing

Anything that calls for a side gets roasted broccoli, asparagus, brussels sprouts, or a big green salad. Order takeout about once a week.

I try to make something new/newish every week. DW would be happy if I rotated just beef/potatoes and scallops/shrimp every other day [eyeroll]

Quiche made with puff pastry (mix of veg, often spinach or mushroom)
Bean/cheese/avocado burritos
Picadillo with rice and avocado salad
Avocado toast with fried or poached eggs
Bay scallops sauteed with tomatoes, garlic, lemon juice, and parsley

-Lemongrass pork meatballs with rice noodles and salad (original recipe is for letuce wraps but I just make it as a salad. I often don't make the noodles with it.
-Milk Street's Chickpea/Cilantro Soup with paprika croutons
-Tacos made with chicken thighs
-Spaghetti with garlic, olive oil and peas
-Roasted, stewed eggplant (husband makes this)
-Chicken and Broccoli stir fry with rice
-Quiche, usually Garlic Broccoli
-Brazilian coconut shrimp stew
-Salmon, usually in cake form because my kids like it that way
-Black Bean Burgers (Sally's Baking Addiction recipe)
