He vacillated between blind reverence (Japan) to downright arrogance and contempt (Iceland and Crete). I DESPISED Kitchen Confidential. I come from a restaurant family and know many people in the business. He portrayed a whole industry as being comprised of 2 types of people: 1) Drug-addled social reject f-ups who think they are hot stuff because they can chop an onion and 2) Earnest Mexicans. I'm here to tell you that while there may be a subset of restaurants that have that sort of kitchen culture, the vast majority of restaurant owners and employees are humble, incredibly hard-working family people who wouldn't tolerate Bordain's style of "kitchen pirate" for a single shift. His contempt of vegetarians was also bizarre.
