I just say "half a pound of roast beef, sliced thin please." Then they repeat the amount back, I confirm and that's that. Often they show me one slice to see if I am satisfied with the thinness.

Just ask for shaved. And /or go to a deli at an off time. Explain exactly what you want, asking for a sample or two. Then continue to go back to that deli and that person who helped you and understands what you want.

and ask them to bring you a sample piece before committing to a whole pound. Delis are usually happy to do this.

The thinnest thin slice is too thick for what you want. It's deal with that or actually say "shaved" which is the appropriate name for the tool they'd need to use. I agree it kind of gets shredded, but it's 100% better than sliced.

I wince at using "shave" and I know that's an annoying order, and really, I don't think I want it "shaved" because it's hard to use at that point. But I do want it very very thin and I am so fed up with getting expensive deli meat and it's too thick. It just happened again yesterday! Pastrami is nearly $20 a pound and when it's sort of thick it's nasty. I don't even want to try the turkey because that's even nastier, to us, when it's not super thin.
