Meatballs. Mix the ricotta with ground Turkey, parm, basil, parsley and garlic and back in oven. They are delicious without pasta, over a salad, in a sandwich, straight out of the oven or fridge.
1 1/2 c ricotta
1/2 c shredded parm
2 lbs ground turkey, the 93% or higher fat kind, not the only white meat one
1 cup chopped basil
1 cup chopped parsley
Salt and pepper
Mix and form meatballs. Drizzle with olive oil and bake 425 for 25-28 min

Well, it's traditionally used for pasta or desserts - but you can use in quiche, you can bake it and serve it with good honey and bread.

I bought some fresh ricotta at a farm stand and it looks really good. What should I make with it? No pasta/lasagna… thanks!
