I don't think you need to apologize at all to that rude poster. Food waste contributes to climate change and any efforts we collectively make to reduce food waste is important. I'm with you 100% on not trying to waste food.

I will grate a potato or two and make quick hash browns for breakfast. Chili over baked potatoes is something I like that hasn't been mentioned above.

I would go through the bag of potatoes and make sure to remove any that have bad spots, store in a cool dark environment and you should be fine for a month.

Op here. Thanks for all the suggestions. And sorry to the person who said I was overreacting. I don't like to waste any food and 10 pounds is a lot for me since DH is out of town for 2 weeks and I only have a DS who is 5.

After the holidays I discovered that potato gratin/scalloped potatoes reheated well from the freezer and I enjoyed having an instant sidedish for as long as that lasted.

Make McAloo Tikki Burgers. This is the vegetarian burger that is common in India and then McDonald copied it for the Indian market, calling it McAloo Tikki Burger. Aloo = Potato, Tikki = Patty.

You can cook them up like making mashed potatoes. Let them cook then freeze them without adding anything in. They will keep well in freezer then just defrost and add in your mixing for mashed potatoes when ready.

+1 for twice baked potatoes. They’re not my favorite, but they do freeze well and my kids will eat them.

OI h ave 10 pounds of russet potatoes that I'm worried will go bad soon. What can I do with them? I already made a pot of potato and leek soup that I plan on freezing. Any other suggestions?
