I posted a few months ago about having 2 lb of almonds (actually, it turned out it was 4 lb) and asked about ideas.

Guess what? I never made anything special with the almonds and they are all gone.

I throw them on salads and in banana bread and pesto sauce. My wife uses them in olive tapanade.

This is easy. Use in cookies and quick breads, lightly toast and sprinkle generously on salads, eat out of hand for a delicious snack. They stay fresh for a long time, but can easily be frozen for future use.

You can make pesto with walnuts and freeze it.

I eat walnuts every morning on yogurt.

I freeze bags for for months and months and add to all baked goods — cookies, banana bread, etc. You could make basil pesto with walnuts instead of pine nuts.

You can freeze them for several months - just push all the air out of the bag and wrap them up tight.

Chocolate chip cookies with walnuts are delicious, btw.

Sent DH to the store for some ingredients, including walnuts. He brought home a 2 lb. bag. Didn't have time to send him back, so the bag is open and still pretty full minus half a cup. Thanks DH!

What can I make with a really large amount of walnuts? Prefer something savory.

Anybody made Salsa de Noci/walnut sauce for pasta? Is it any good?

I looked at recipes for Circassian Chicken, but the photos are so unappealing. They look like my cat's food. Anyone made that successfully?

Would love other ideas.
