Butter has water that will evaporate (so the moisture is leaving the final product, this dryer). Salted butter has a higher moisture content than unsalted.

This is why muffins and cakes call for oil but cookies call for butter.

Half butter, half coconut oil for most things gives a fantastic texture. Full coconut oil for brownies. Don’t use for bake sales, though, as some people are allergic and its not a common ingredient to expect in home baked goods.

Not sure but IMO butter always tastes better and is plenty moist. Unless there is some delicate flavor it overpowers.
