Also, if you have under cabinet lights that slightly warm the bottom of your cabinet, you can put your rising dough in that cabinet and it acts as a proofing box.

If it is a 90 min you can’t leave it out a few hours. It will overproof. Next time turn the oven on for 20 seconds then shut off and put the bread in there to rise.

If it's chilly in the house, turn the oven on briefly -- just long enough to feel barely warm. Turn oven off. Place rising dough (in container that is oven safe) into turned-off but still barely warm oven. Go do your errands.

I have a dough rising...first rise is 90 minutes. But it hasn't risen much. I need to go out in a bit for a few hours - am I going to kill it if I leave it out? It's pretty chilly in the house. But I don't want to put it in the fridge, since I need to shape it and then let it rise over night.
