Carrots are so good roasted! I roast them with Moroccan spices.

I marinated two eggplants cut in large cubes with 2 tablespoons of olive oil, some balsamic vinegar, cumin, paprika, Chile flakes, oregano, salt and a sprinkle of brown sugar, baked at 400F for 25 minutes, tossed them half way, they were delicious, enjoyed them in my salad and added the leftovers to the spaghetti sauce.

Roasted Carrots and Sweet potatoes are also really good if you like things a little sweeter.

I generally eat a lot of roasted vegetables—the regulars are: asparagus, peppers, squash + zucchini, brussels sprouts, cauliflower, broccoli, and then sautéed cabbage. Any suggestions? I tend to like more flavorful/sweeter methods of preparation (I don’t really like raw veg in salad etc)
