I cut the mushroom stems and add anything greens to them. Mix and combine with chia seeds, rice or corn starch to bind them. Add some spices. Maybe use gluten free panko if I have any. If not, I have gluten free bread crumbs left over from sandwiches (my kid hates the crust of any bread). Sometimes, i add shredded cheese of any kind to help with the binding. And if I want to add meat, I use ground pork or chicken or turkey.

You have to make sure the mushrooms are dry when you stuff them. When you bake them, make sure the are not exposed and not covered. When you cover it, it creates moisture. You have to bake it just enough, abut 15 minutes for me. I notice if I bake them in a pan, which is shallow and flat, it doesn't create moisture. I I bake them in a pyrex glass dish, it creates moisture.

I bake portobellos brushed with balsamic and olive oil and stuff them with sautéed spinach with lemon juice, garlic, smashed garbanzos and top with feta. Serve over farro for a complete meal.

I like stuffed mushrooms but when I try to make them it doesn't work too well because they fill up with liquid. Any solution to that?

Stuffed mushrooms are so versatile just tiny tiny tiny chop up whatever you have in your fridge leftover and add in good breadcrumbs. Pepperonis or salami in small amounts is good. Bell pepper. Mozzarella. Onion. Garlic. Honestly if you have some other vegetables about to go bad as long as you chop them up teeny teeny tiny they can work

I discovered stuffed mushrooms over the Christmas holiday. I have made them a few times reading some recipes but really putting what we like in the stuffing. Does anyone have a favorite recipe or tips for cooking? I found stuffing them with flavored breadcrumbs turns out best with really good breadcrumbs. (I got a bag from a bakery that were great.). Using a combination of goat cheese abs bread crumbs has been a hit with adults but kids say the cheese is too sour.
