He will eat a little beans sometimes. Prefers not to. I make tacos pretty regularly, either chicken or fish for most of us and beans for vegetarian.

Also make a lot of chili, roast chicken, curries, stir fries, meat of some sort with 2 vegetables (dd makes a veggie burger or falafel or something).

Ok, I’ll add a bit more info…
Dh doesn’t eat carbs
12yo doesn’t eat any meat or fish
I cannot have soy so fake meats are out
I typically try to do 1-2 vegetarian meals for us all and then have something dd can eat alongside the side dishes of meals with meat.

Are you looking for full vegetarian meals, or things where the tween can remove meat (or everyone else can add it)?

Baked potato bar is always a hit here. Toppings can include chili (meat or vegetarian, depending on the answer above), crumbled bacon for those who eat it, black beans, chopped and roasted broccoli, and of course cheese / sour cream / avocados / etc.

Vegetarian tacos are our new fav good. I use the beefless beef crumbles from Trader Joe’s. Add in some black beans. Use old El Paso mild seasoning. Add whatever else everyone likes.
