Subject: Dinner tonight: please help me out with what I have on hand!
OP here.
I made a vegetable stew, with beans to soak up the liquid, and cooked ground beef with ginger/garlic/soy sauce/brown sugar. I served it in bowls with the beef spooned on top.
We're used to eating Asian fusion type dishes, but I had never added beans to a ginger dish before. It wasn't bad at all.

If the rice is already cooked, or even if not, fried rice using the Chinese sausage, egg, carrots, celery and spinach

Or a beef skillet meal, brown the beef and diced veggies in a pan, add a cup of broth or water, simmer until the potatoes are coooked through, mix in some shredded cheese.
Shepard's pie is also a good idea.

A soup with veggies (carrot, celery, onion, garlic, bit of tomato sauce/paste), rice and meatballs. Add some greens and some heat.
