For speed, you can’t beat the pre-cut sweet potatoes or butternut squash. Roast on a pan.

Steamed broccoli is yummy.

They also have a lot of seasoned vegetable blends in the freezer.

Almost any vegetable can be stir fried or roasted with olive oil and seasonings. I think the only trick is figuring out what seasonings you like. I use garlic, ginger and sesame oil a lot; a shake of adobo or Old Bay; or caramelized onions— if you have the patience to make them. I grew up on Southern cooking, so greens, cabbage, corn, black eye peas get cooked with sautéed onions and smoked turkey (either as seasoning or to make a complete meal). Fried apples or homemade apple sauce or peach compote make nice sides. And a dollop of Raos sauce and a sprinkle of cheese is great with veggies, especially zucchini, yellow, or spaghetti squash.

It would be easier to make more tailored suggestions if you could provide a bit more information. Do you stick with corn on the cob and string beans because that’s all you like? Are there other sides that you would enjoy — if you felt comfortable making them?

Sauté, steam, or bake/roast any vegetable. Or make a simple side salad—literally just lettuce, tomatoes, cucumbers.

Baked: Sweet potato, spaghetti squash

Microwaved from frozen: peas, edamame

Raw vegetables, with something like a store bought hummus as a dip

Salad

Sliced tomatoes

Fresh fruit

Steam [insert pretty much any vegetable] and toss with a little butter and S/P

You can do it in the microwave in less than 5 minutes.

Choose veggie- peppers, potatoes, asparagus, Brussels, etc. Toss with olive oil, salt, pepper. Roast. So easy.
