Moo shu and I toss in a handful of chopped kale at the end (the recipes are daunting, but now i just use any veggies and protein in hand (including toasted cashews for a veggie option) and read a cheat to use 6in Mexican tortillas. It gets my kids to eat a veg-forward meal on a weeknight, so I’m keeping it.
Sesame noodles : I make this but instead of just cucumber I add red bell pepper, bok choy, kale

Saag paneer is a great use for kale. Typically saag is a mix of greens like spinach, mustard greens etc. Just make sure to remove the tough ribs before you add it in.

Kale chips. Toss kale pieces with olive oil and sprinkle with salt. Spread on single layer on sheet pan. I cook on convection 375 for 6 minutes. You may need to adjust cook time and flip halfway if you don’t have a convection setting in your oven.

I love bok choy chopped in soups, and the kale is great in smoothies. I also like to use kale in salads similar to the NYT one PP posted, though I don’t use breadcrumbs, just pine nuts or walnuts.

I received a ton of lacinato kale and boy choy/baby bok choy in my grocery delivery this week. I regularly use kale in stews and curries, and I often saute bok choy/boy choy with ginger/garlic to eat as a side or incorporate it into a stir fry. Any other favorite recipes for these ingredients? Doesn't need to use both at the same time. Just looking for some new ideas. Thank you.
