We just made lasagna and froze some of it (uncooked) in small foil pans -- just enough for two servings. Goes straight from the freezer to the oven, plus bagged salad and dinner is done.

Think about making and freezing enough just for one meal:

Spaghetti sauce
Marinated chicken breasts or thighs
Salmon filets
Fish cakes

My DW has become addicted to CostCo butterfly shrimp. That's the easiest dinner ever -- add rice and a veg and open a bottle of sweet chile sauce.

We are starting a renovation in a few weeks, and I was thinking I would make some freezer meals before that can be easily cooked/heated in the crockpot or microwave. Any suggestions? I appreciate any specific recipes or links! Thanks in advance!
