I’m actually blanking on breakfast. I know one likes oatmeal, but that won’t be good for lower carbs. Hard boiled eggs maybe? And bacon? I’m just blanking on things I can set out that won’t require me to cook right before serving or things that can be set out waiting for people to eat.

Oh good - meat and potatoes loves potato chips so I assume tortilla chips would be welcome. Regular taco night with two meats and a couple extra toppings/sides sounds doable!
