Not wasteful, do it! I remember traveling to Argentina and having cubes of steak in pasta sauce instead of ground beef and it was delicious.

I guess, but I personally would prefer to eat it by itself or add it to a salad or saute it with some mushrooms.

It would make a great steak sandwich (think upscale cheesesteak).

I’d make stroganoff instead of chili but as long as it gets eaten, who cares? You could grind it up and make burgers too.

No. If you are gonna eat everything, it is not wasteful. You can even put it in instant noodles and make soup out of it and that will not be wasteful either. In the end, it is just an ingredient.

Wasteful is when you don't use it, or it spoils or you have to throw it away. Or making something that tastes terrible and no one can eat it.

I do this with leftover filet. It’s really good

It's delicious! My in laws used filet for chili once and it was the best chili ever.

Fine, but add just before serving so it’s not overcooked.

Jacques Pepin has a boeuf bourguignon recipe that calls for filet.

It’s wasteful only if you don’t eat them or make what you don’t like. If you like chili it’s not wasteful at all.

This is probably what the Fancy Chili People do. Make it, and report back!

Sure. If you aren’t going to use it anyway, you can make chili with it. It’s not wasteful if you actually eat it.

Randomly stumbled upon a possibly mismarked package of beef tenderloin filets this morning -- only one was marked super cheap. So I bought it but I really don't enjoy making steak at home (when we crave steaks we prefer them at a great restaurant or grilling in the summer). Anyways, I have to cook this few pounds of steak today so I was thinking of just cubing it, sauteing them in a little oil/butter, and using that for the chili's meat?
