Take at least three types of fruit, cut them up, place in bowl = fruit salad.

+1 and who on earth does not know this.

+2. Seriously “fruit salad” isn’t a new concept!!

What do you think a green salad is? Now translate that to fruit. A salad is simply a few different things put together in a bowl--fruit salad, chicken salad, green salad, jello salad, tuna salad etc.

Mediterranean spread.

Olives, cheeses, bread, hummus, baba ganoush, grape leaves, grilled chicken, falafel, rice, greek salad with dressing on the side.

There are very few dietary restrictions that can't find something (usually multiple things) in a spread like that. Possibly a person with an olive allergy would struggle, but even they should be able to eat the chicken and rice. Many restaurants will cater this. I've done it for parties, and it's always a hit.

Chicken salad is disgusting. Offer a non-mayo based protein.

Again? We're in an Omicron surge. Unless you work in a homeless shelter, OP, or you're serving your food outside, you shouldn't be doing this.

Big pot of minestrone soup or other homemade soup, good-quality bread and butter/oil, salad. Maybe also a fruit salad.

Something with a fruit salad. Maybe a pre-made quiche?

I have no clue if they have dietary restrictions and am looking for something easy.

Thanks!
