My lovely MIL lives alone and has no idea how to scale up meals for the nine people in her house but insists on cooking. For dinner last night she made chili using only 1 lb of meat and 1 can of beans. We each got a 1/4 cup serving [she measured each to make sure there was enough.] And that's it. I did a grocery rub for a bunch of fruits and veggies but when I offered to get the ingredients to double her planned meals sizes she was offended.
