I would also boil the leftover fruit with water, orange juice, and orange zest (and maybe a cinnamon stick if you can get them) to make a fruit compote you could serve with meat.

5kg may be too much, but a Spanish Roscón de Reyes (Three King's Day Cake) may fit the bill! It's a yeast bread type cake with the candied fruit artfully arranged on top.

My mom is Scottish and used to make a Madeira cake with any leftover cherries or other fruit from her annual Christmas cake. I don't know where her recipe is, but this one looks good. We have recently moved to Singapore and I am trying to make our first Christmas here a little bit like home. With all of the Covid restrictions, shipping delays for gifts, supply chain disruptions, our dog is allergic to the grass, and now I’ve been quite sick with an ear infection, so things aren’t exactly going well. In a burst of delusion yesterday while waiting my turn at the local clinic, I found a local baking shop hoping to get supplies for some familiar treats. They had a giant bag of what looked like candied fruit, so I grabbed it along with “self-raising flour”, confectioner’s sugar, and Crisco. Now that I’m home I’ve realized that my recipe box is among the things missing from the move. And I haven’t unpacked the book boxes with my cookbooks. I’ve tried googling, but am just overwhelmed.

Can anyone point me to a recipe you have used that requires diced candied fruit? I would love a fruitcake, fruitcake cookie, or really anything that is relatively easy to accomplish.

Description of the fruit-
Our Redman Mixed Fruits are a sweet medley of different preserved fruits like citrus peel, sultanas, glaced cherries and glaced papaya. This product is made in Singapore. Store in a cool, dry place.
