Some weeks I do that and am really on top of the meal prep. I also keep a solid stash of yummy frozen vegetable dishes handy so I can just pop those in the oven when I haven't gotten to meal prep.
I also want to option to keep a giant bucket of Mezeh grilled eggplant in the fridge. I can't make it as well myself, so if Mezeh won't sell it to me, I'm looking for other places that sell really yummy grilled vegetables.
