If you're microwaving them, just put a smaller container and a shorter time period. Experiment by cutting the time way back, and then tasting until you get to the time you want. Maybe add a pat of butter, or don't, depends what your kids like.
If boiling, just use less water.
I also used to just put them in a container and let them thaw in their lunch box. They're already cooked, and so they'd taste like the ones from dinner.
I microwave them in a glass dish and cover the dish with a one of those big microwave covers. I find they get very hot, explode (ie mushy) and then cool quickly so they are basically cold midway through their meal.
They are not in school right now but I will file away that thawing idea!
