Almond brittle also sounds good but I like the pastry ideas. And maybe also a rolled sponge. . . get some cherries in there too perhaps.



And it turns out I have 4 pounds, not 2. So I can eat my almonds and have them.

I go through a 1lb bag of Aldis roasted unsalted Almnods every two weeks. I carry a handul in my pants pocket as a snack throighout the work day.

Oh, I can totally do that (ask me what happened to the other bag).

To be more specific, I'm thinking of desserts and possible sides/entrees that feature almonds. They're a bit much to throw on a salad (I usually use sunflower seeds and sometimes broken walnuts in salads).

I've thought about blanching them and seeing what I might do with ground almonds, but definitely thinking dessert, holiday thing.

Are you interested in soup recipes? Lot of them out there, especially creamy/thickened with almonds.
