Cornish hens (buttermilk brined, rosemary and lemon flavored) and mushroom risotto.

Jambalaya, gumbo-rice, paella... All easy dishes with tons of flavor and you cannot mess it up.

Paella takes all day to make. I think OP said simple.

No, it does not. 1 hr on stove top, 30 minutes tops in a pressure cooker. Paella is simple and idiot-proof recipe.

One baking sheet: seasoned protein and veg with olive oil and salt in the over for 25-35m at 425. For example:
- 1lb salmon seasoned with something (lately it’s been everything but the bagel spice) and asparagus with oil+salt
- chicken breasts seasoned with something (Cajun spice, Italian seasoning, etc) and diced potatoes w/olive oil and salt

One pan: chickpeas+frozen veg+bottle curry sauce, serve over rice (microwave)

One pot: ramen (either package or if you’re feeling fancy, broth + noodle). Cook noodles till done, in the boiling soup water drop a whisked egg or two, half a bag spinach, and some chopped onion. Top with soy sauce or sriracha.

Spaghetti and meatballs (make double meatballs and sauce and freeze them)
Chicken and rice
Fettuccini with mushroom sauce
Fajitas
Sweet potato tacos (kid favorite!)
Pizza (with homemade or store bought dough, it’s easier to make than you think)
King ranch chicken casserole
Red beans and rice (with or without andouille sausage)
Any simple protein with roasted delicatta squash and broccoli served with a maple/mustard glaze
Black bean and cheese enchiladas
Baked ziti
Ramen with homemade soyu broth (it’s easy), chicken and soft boiled egg

These are my go tos.

Tacos!
We also do sandwiches and raw veggies or fruit on side. That requires picking up decent bread though.
Fish cooks quickly and easily — pour on a marinade, throw on grill with some veggies covered in olive oil and salt.

Dietary restrictions? Preferences? Budget? Cooking ability? Amount of time you have to prepare meals?
