I use a recipe from Once Upon a Tart but I have always had a problem getting to that chewiness. But last year I forgot the baking soda. The cookies were flat (but they did crinkle) and stayed wonderfully chewy. I kept them in the freezer taking out a few at a time which may have helped.

It is a house recipe but you can make 1/3 or 2/3 of the recipe (just have to estimate the spices). I use butter in place of vegetable shortening.

Strong molasses flavor, very nice texture and fun to decorate!

I roll out and bake my own gingerbread house each year and this recipe is ridiculously over complicated. May be fine for cookies but don’t follow the house instructions. I’d slit my throat first.

Buy the gingerbread cake mix and make the cookies on the recipe on the back.
They stay soft if you seal them.
