It’s not that hard to be careful. Don’t cook with gluten flour at exactly the same time (if you’re making gluten cookies, make the gf ones first). If you’re cooking them in the same oven at the same time (which you definitely can), always put the gf stuff on the top rack and gluten on the bottom. Wash stuff in the dishwasher, take it out with clean hands, cook on parchment paper, you’ll be fine.
It’s nice that you want to do this for your friend! Celiac can be lonely and friends who make an effort are treasures.
