I made the spatchcocked, buttermilk brined turkey from the New York Times. First time doing either method, and it was magnificent. Best turkey I’ve ever had.

I brined a turkey breast in buttermilk for the first time and then roasted it with just salt, pepper and butter. Color was great and it tasted great.

The dinner turned out great. Made a buttermilk brine from Williams Sonoma website and some great cornbread, sausage, and apple dressing.
But the real successes were:
All the adults started drinking wine around 11am, do we were all in a great mood when it was time to eat at 1pm.
Postprandial family kickball game. All ages played, and we had a blast!

We're at the ocean for a few days and cheated with the cooking this year. Precooked turkey from Whole Foods and a couple of sides -:- pretty good quality and so much less work. Left more time to enjoy the beach.

Everything!

I roasted a bone in turkey breast and it was just perfect! I’ve had trouble in the past getting them done but not dry.

Sides: mashed potatoes, homemade rolls, sautéed green beans (still bright with a crunch), sage sourdough stuffing, sumac roasted carrots and parsnips. They all came out perfect.

Oh and pumpkin pie. Crust was slightly burnt, but at least it wasn’t soggy on the bottom!
