Why change?

I don’t live in Bethesda anymore?

I make sashimi.
That way I don't have to deal with perfecting the rice.

I garnish w shiso, daikon & seaweed.

You can buy frozen sushi grade fish at Asian markets. Hana in DC sells it if you can’t get to the burbs

I get sashimi grade fish and roe from Hmart when I want to do something special. Other times I make spicy (cooked) salmon using Japanese mayo and shichimi togarashi (a spice) with cucumbers, or avocado. Fun and easy!

Use a rice cooker to make rice, then season the warm rice a little with the vinegar. Let it cool.

Start with vegetables, smoked salmon and cream cheese, cooked shrimp, fresh good-quality salmon or tuna. Watch a YouTube video, it’s easy.

you have to be very careful with the raw fish. My sibling makes sushi all the time, but they usually go fishing and eat the raw fish there or within a day. I thinks starting off with store bought smoked salmon or cooked shrimp is a good idea.

There is also a sushi rice vinegar, or as pp stated, make it yourself.

No idea about local fish sourcing, but I got the family a sushi maker for Christmas. I’m hoping it makes the process a lot easier.

I am a novice sushi-maker and would like to give it another try. Is there a place that sells all the ingredients including fish that you recommend?
