I am a POC and an immigrant coming from a country that was colonized by white people for a very long time. Doesn’t rub me wrong at all and I am happy that ethnic foods are finally becoming mainstream and can be easily found. OP, please find some real problems.

I collect old cookbooks and see plenty of examples of curries/ramens/stir fries/kebabs etc. from the 1970s/1980s in "traditional American" cookbooks.

Sorry your white friends apparently only eat peanut butter.

People eat ethnic foods because they are tasty.

I am Indian-American and I cook Indian , Korean, Chinese, Japanese (I am a sushi genius), Italian, Mexican, Ethiopian, Thai, American, Moroccan and Georgian food.

Do I like everything from every cuisine? Of course not! But, what I like in a restaurant, I replicate at home. I just don't call myself a chef or a foodie. I am just a mom who cooks to make my family happy.

How many people making these recipes know what part of the world they originate from? Do they know the cultural context?

As a mixed European-Asian person, I'm a bit confused by your unnecessary outrage, although I understand white Americans have this new fashion of wringing their hands over their perceived privilege and the perceived non-privilege of other races (is that a form of reverse racism?).

Anyway. My Japanese father couldn't find any ingredients with which to make sushi in the northern European country we lived in during the 80s. So one New Year's Day, he made little sushi rolls with tiny sausages inside, and ones with cheese and cucumber, others with smoked salmon and another with carrot and some kind of paste. The sushi rice was a precious employee gift sent over from Japan by his company. The gag roll was the one with celery and dried prune! We still laugh over that one. He was that desperate. It was fusion before fusion.

Today we still honor the now traditional New Year's Day fusion sushi... but we leave out the celery/prune one.

OP, tell me about your culinary heritage recipes and I will enjoy those, too!

I am not young and not on Instagram, but I love trying and adapting new and different flavor combinations. When I can, I try to get the right ingredients, which are generally more available now than they were decades ago in most of America. Also, social media makes it much easier to learn about new things and share ideas.

I would prefer not to be limited to my "own" heritage foods based on my DNA (as French-Canadian and Ashkenazi recipes are not the most vegetarian-friendly).

I look at my Instagram feed and am met with beautifully displayed and watered down versions of Asian, middle eastern and and African cuisines. The girls making these recipes are not immigrants or POC but young, white rich women who “learned to cook in their kitchen and are foodies.”

I look at their recipes and it makes me a little sick. They’re using ethnic spice mixes and combinations of sauces that have so much history and context regarding the regions of the world in which they originate. I think of how white people used to eat pb&j now eat chicken curry and Korean tacos and naan.

As a POC it bothers me that our culinary heritage is discarded while a random white American person takes the basic idea and adopts it and presents it as their own.

So frustrating!
