I feel the same as you about all of those delivery services. If it's the restaurant's own delivery people they have much better control over quality. I never use uber eats/doordash/etc.

I order sushi from DoorDash frequently and have never had a problem. I do only choose restaurants relatively close to my house though (within 15 minutes or so).

You're overthinking it. I've ordered sushi 1-3 times a week for years and years and have never once had an issue.

Am I overthinking this? Would you assume it would be out of proper temperature for too long?
