The client can tell the lawyer (who passes it on to the process server) "She'll be at this hotel on this date for a convention" but it's up to the process server if they approach by knocking on the hotel room door or in the dining room or at the convention. I worked in matrimonial law - I assure you the clients did NOT decide how their spouse got served. They gave suggestions of where/when to find them.
