Weekdays if we don't have any leftovers I'll make the following in under 30 minutes: eggs scrambled with spinach and shredded cheese. boboli pizza crust with tomato sauce and cheese on top, add some frozen vegetables or fresh mushrooms and cook in the oven fresh fish with olive oil and salt, broiled for like 15 minutes We try to keep a fresh baguette in the house (which is easy for me to pick up on the way home from work) and it makes almost anything feel like a more complete meal.
