The yogurt pita concoction he makes in a couple minutes on his way out the door to work as I make kids’ school lunches.  The beans, well those aren’t as easy.  You have to overnight soak, then cook a long time, then smash a bunch of garlic, squeeze several lemons, cut a lot of vegetables- we usually do this as a Sunday morning breakfast.  Sometimes my son (10) will ask for chickpeas for breakfast.  Same theme as the above, but I just rinse a can of garbanzo beans, microwave, then add some chopped lemon,cumin, and olive oil.  It is a decent quick substitute.  [/quote]
