I SAHM with three boys, a housecleaner once a week and we absolutely eat well. I plan out our meals on Sundays and shop Monday morning after dropping the boys off. I prep as much as I can during the day. We aren"t together for dinner most nights either, but I still make sure the kids eat well and my husband and/or I eat later in the evening. We have activites 7 days a week. For example, this week on Monday I made chicken soup-used a whole chicken. Had that for dinner with matzah balls, salad and bread Leftover chicken I made enchiladas side of whole grain chips and salsa and black bean and corn salad-Tues night. This was Wed night too. Tonight a curried rice and chicken dish with peas. Fri night we are all going to a Halloween party potluck thing so need to cook. I make about three or four meals a week. All about planning.[/quote]
